Cooks from DLS Kormisosh cooked game meat with students from Smolyan Vocational High School of Tourism

Employees of the Kormisosh State Game Farm gave a demonstration of game meat processing in front of students from the “Nikola Y. Vaptsarov” SPGTS – Smolyan. Cooks from the game farm, together with young people who chose cooking as their profession, prepared game meat dishes, which are part of the main menu of the Karamush Hunting Residence. “We decided to show the students how game meat is prepared, so that they can learn that hunting and cooking are compatible,” said Stefan Peltekov – manager of the Hunting House at DLS “Kormisosh”. He added that in the hunting farm, mostly game meat is cooked – fallow deer, roe deer, etc. All products are ecological and produced in the vegetable garden, which the employees take care of themselves. They even sow their spices. “Today, our menu included making spinach soup, a kebab made from loquat meat, and poached pears for dessert. We explained to the students the intricacies of preparing game and invited them to visit us to see firsthand how it is served according to protocol when we have foreign groups. We think that we will be useful and we hope that this initiative will become a tradition. We will donate the products, we will demonstrate the technology of preparing the game meat, and in this way we want to ignite the students, to love cooking,” Peltekov said. “We have to teach young people to love the forest, to take care of it, so that they can benefit from its gifts. We made the close connection of these gifts and the way to situate them in the kitchen. We know that ecological food is popular, so today we took advantage of the ecological products that were kindly provided to us by the Kormisosh State Game Farm, with the way of processing the game meat and presenting it,” said the director of SPGTS “Nikola Y. Vaptsarov” Antoineta Karadjova. Game is not more difficult to cook, it is simply cooked longer, said one of the cooks at DLS Kormisosh, Dobrinka Stancheva. “Game meat has a lot of blood in the muscles, it must be bled by soaking in water, then drained and flavored. Game meat brings a lot of spices. Then it is prepared according to the given recipe. How long it will be cooked depends on the age of the animal itself, on whether it is frozen or not,” said Stancheva. Before entering the kitchen, the young people were given an innovative lesson with the foresters from DLS, after which trees were planted in the school yard.
